Bread mix 20 kg Dough temperature 22-24 C, water 12 liters Salt 0,3 kg, yeast 0,6 kg cut to desired weight. Fermentation time 4 minutes slow 10-15 minutes fast (spiral)-20-30 minutes (fork).Baking temperature 220-240 C
